{"id":323,"date":"2009-10-24T03:52:21","date_gmt":"2009-10-24T11:52:21","guid":{"rendered":"http:\/\/www.thezeal.com\/cooking\/?p=323"},"modified":"2009-10-27T03:58:33","modified_gmt":"2009-10-27T11:58:33","slug":"raagi-adai","status":"publish","type":"post","link":"https:\/\/www.kaizen.ist\/cooking\/raagi-adai\/","title":{"rendered":"Raagi Adai"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Ragi flour &#8211; 2 cups<\/li>\n<li>Onions &#8211; 1 chopped finely<\/li>\n<li>Green Chillies &#8211; 2 finely chopped<\/li>\n<li>Coriander leaves &#8211; 2 tbsp<\/li>\n<li>Curry leaves &#8211; 3-4<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<p><strong>Method:<br \/>\n<\/strong><\/p>\n<p>In a large bowl, mix raagi flour with little water and salt and make a thick dough (like chappathi dough consistency), adding in the onions, green chillies, curry leaves and coriander. Make round balls and flatten them on your palm to make a flat patty.<\/p>\n<p>Heat a tawa (flat pan)\/nonstick pan, brush the pan with very little oil just to make sure the dough doesnt stick to it. Then place the patty on it and spread it into a round shape. (If you are not able to handle the slight heat of the tawa, alternatively, you can flatten the dough balls on to a plastic sheet and then put it to cook on the tawa). Pour a little oil on the sides if preferred. Allow the adai to cook on one side and then turn over and cook on the other side.<\/p>\n<p>Goes well with hot chutneys and butter or can be taken plain with butter. You can mix in some sauteed drumstick leaves to the raagi dough and make the adais.
