{"id":137,"date":"2009-10-21T16:43:25","date_gmt":"2009-10-22T00:43:25","guid":{"rendered":"http:\/\/www.thezeal.com\/cooking\/?p=137"},"modified":"2009-10-21T17:54:59","modified_gmt":"2009-10-22T01:54:59","slug":"aatukal-paya","status":"publish","type":"post","link":"https:\/\/www.kaizen.ist\/cooking\/aatukal-paya\/","title":{"rendered":"Aatukaal Paya"},"content":{"rendered":"<p><strong>ngredients:<\/strong><\/p>\n<ul>\n<li>Goat Legs\/Paya pieces (smoked pieces) &#8211; 1 lb<\/li>\n<li>Onions &#8211; 1 big (chopped)<\/li>\n<li>Tomatoes &#8211; 2 medium (chopped)<\/li>\n<li>Green Chillies &#8211; 3 (slit lengthwise)<\/li>\n<li>Ginger garlic paste &#8211; 2 to 3 tsp<\/li>\n<li>Turmeric powder &#8211; 1\/2 tsp<\/li>\n<li>Chilli powder &#8211; 2 to 2 1\/2 tsp<\/li>\n<li>Coriander powder &#8211; 1\/2 tsp<\/li>\n<li>Garam masala items &#8211; 1 tsp (cloves &#8211; 1, cinnamon stick &#8211; 1, saunf &#8211; 1\/2 tsp, bay leaf &#8211; 1)<\/li>\n<li>Salt &#8211; to taste<\/li>\n<li>Tamarind paste &#8211; 1\/2 tsp<\/li>\n<li>Oil &#8211; 3 tbsp<\/li>\n<li>Coriander leaves(Cilantro) and Curry leaves.<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Clean the pieces well to remove any dirt\/smoked remains.<\/p>\n<p>Pressure cook them with some turmeric, chilli, coriander, ginger garlic paste, half the onions, tomatoes, green chillies and salt till the legs are done well and soft (takes approx 20-25 min).<\/p>\n<p>In a pan, heat oil and add the garam masala items and rest of the onions. Saute the onions for a while. Then, add little ginger garlic paste, fry for a while, then add the pressure cooked contents and mix well. Allow to cook on medium heat for 10 minutes. Then add the tamarind paste and bring the mixture to a boil. Add the curry leaves and coriander leaves for garnish.<\/p>\n<p><strong>Miscellaneous:<\/strong><\/p>\n<ul>\n<li>Tips: Goes well with rice, aapams. If preferred, you can add in some coconut milk to thicken the kozhambu\/soup.
