{"id":116,"date":"2009-10-21T16:32:37","date_gmt":"2009-10-22T00:32:37","guid":{"rendered":"http:\/\/www.thezeal.com\/cooking\/?p=116"},"modified":"2009-10-21T17:42:44","modified_gmt":"2009-10-22T01:42:44","slug":"mutton-kurma","status":"publish","type":"post","link":"https:\/\/www.kaizen.ist\/cooking\/mutton-kurma\/","title":{"rendered":"Mutton Korma"},"content":{"rendered":"<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Mutton &#8211; 1 &#8211; 1.5lb cut into medium sized pieces<\/li>\n<li>Onions &#8211; 2 big (sliced)<\/li>\n<li>Green Chillies &#8211; 3 big<\/li>\n<li>Ginger &#8211; 1\/2 inch chopped<\/li>\n<li>Garlic &#8211; 5 cloves<\/li>\n<li>Coconut grated &#8211; 1\/4 cup<\/li>\n<li>Turmeric powder &#8211; 1\/2 tsp<\/li>\n<li>Coriander powder &#8211; 1\/2 tsp<\/li>\n<li>Cumin seed powder &#8211; 1\/2 tsp (optional)<\/li>\n<li>Saunf &#8211; 1 tsp<\/li>\n<li>Garam masala items &#8211; 1 tsp (cloves &#8211; 1, cinnamon stick &#8211; 1, bay leaf &#8211; 1)<\/li>\n<li>Salt &#8211; to taste<\/li>\n<li>Oil<\/li>\n<li>Coriander leaves(Cilantro)<\/li>\n<li>Lemon juice (optional) &#8211; a few tsp<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Grind the ginger, garlic, saunf and green chillies with half the onions (with little water) and set aside. Grind the grated coconut with some water and set aside.<\/p>\n<p>In the pressure cooker, add the mutton pieces, ground ginger-chilli-onion paste, turmeric, coriander, cumin and salt. Mix well.  Pressure cook for about 10-15 min (or till mutton is done)<\/p>\n<p>In a pan, heat oil and add the garam masala items and then add the rest of the onions. Saute the onions for a while. To this, add the contents of the pressure cooked mutton masala.?  Bring to a boil after adding a little water. Finally, stir in the coconut paste with some water and bring to a boil. Squeeze in a little lemo juice if preferred. Add the coriander leaves for garnish.<\/p>\n<p><strong>Miscellaneous:<br \/>\n<\/strong><\/p>\n<ul>\n<li>Tips: You can add potatoes or peas to this korma<\/li>\n<li>Serves 4-5<\/li>\n<li>Cooking Time: 30 min<\/li>\n<li>Cuisine: Indian<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients: Mutton &#8211;
